Ho Chi Minh City, often still called Saigon, offers a breakfast scene defined by steaming noodle soups and crispy baguettes. The dish that anchors the city’s culinary identity is cơm tấm, a humble plate of broken rice that has evolved into a national obsession. The name comes from tấm, the shattered grains left over after rice milling, a cheap staple for working-class families in the late 19th century. Over time, necessity turned into tradition, and the soft texture of broken rice combined with fish sauce and grilled meat has made it a beloved morning ritual across the city.

A traditional cơm tấm begins with steamed broken rice, often cooked with pandan leaves for a subtle fragrance. The real magic happens on top. The classic plate, cơm tấm sườn bì chả, features a charcoal-grilled pork chop, a mixture of shredded pork skin tossed in toasted rice powder, and a steamed egg-and-pork loaf studded with glass noodles and wood ear mushrooms. Modern versions often add a fried egg, Chinese sausage, or crispy pork fat. The dish finishes with mỡ hành (scallion oil), sliced cucumber and tomato, pickled carrots and daikon, and a bowl of seasoned fish sauce to pour over everything.

“Cơm tấm comes from the hard times in Vietnam,” explains Lê Việt Hồng, the Saigon-born chef and co-owner of Michelin-starred CieL Dining. “The broken rice is the most important part. You could eat the rice alone with just fish sauce and it would already be delicious.” Hồng notes that the dish relies on balance; the sweetness of the barbecue is cut by the tart pickles, while the runny egg yolk adds creaminess to the rice. Without the fish sauce, he argues, the dish loses its Vietnamese character.
